What you need

tsp ground cinnamon

tbsp mustard

tbsp paprika

tsp ground black pepper

tbsp light-brown sugar

tbsp sugar

tbsp kosher salt
lb pork shoulder roast
tbsp vegetable oil

tbsp pickle

tbsp ancho chile

tsp allspice

cup vegetable broth

tbsp garlic powder

Instructions
Prepare the Pork Trim the pork of excess fat. Rub the pork with the salt and pepper. In a slow cooker, add the oil, then add the pork. Whisk together the remaining ingredients in a separate bowl, then pour the mixture over the pork and cook on low for 10 hours. Once done, remove the pork from the slow cooker and add the remaining salt to the juices and stir to combine thoroughly. Place the pork on a large cutting board and use two forks to pull the pork apart. Return the pulled pork to the juices in the slow cooker while you prepare the buns. Prepare the Onions At least 30 minutes before the pork is ready, slice the red onion thinly. In a large bowl, whisk the ice water, vinegar, salt, and sugar until the salt and sugar have dissolved. Add the onions and let the mixture sit for at least 30 minutes and up to three hours. Add ice to the bowl as needed to keep the liquid very cold. Serve Put some pulled pork on the buns and top pulled pork with the red onion slices, honey mustard, BBQ sauce, pickles, hot sauce and/or any other condiments you want.
