Banana Bread French Toast - Foster Style

French toast made with slices of banana bread and a delicious Banana's Foster style sauce!

What you need

heavy cream

banana

light-brown sugar

unsalted butter

granulated sugar

vanilla extract

egg

all purpose flour

milk

MAKE THE TOAST Preheat your oven to 170°F (to keep the french toast warm). Get a large skillet to temperature on medium high heat on the stovetop. Melt the butter in the skillet. Meanwhile, whisk the milk, flour, eggs, vanilla and sugar well. Drench the banana bread in the mixture for at least 5 seconds - letting the liquid soak into the bread a bit. Add the bread (probably two batches) and cook on both sides to golden brown. When finished, remove to a rack on a sheet pan and put the toast in the oven to keep warm. MAKE THE Banana's Foster "SYRUP" Add butter to a skillet on medium to medium high heat. Once melted, turn heat to medium or slightly below medium and add the brown sugar to cook until incorporated. Add the cream and stir to incorporate fully, then add the bananas to heat for about a minute. Turn heat to medium-high for 1 minute. Then, turn off the heat and CAREFULLY add the rum (DO NOT POUR STRAIGHT FROM THE BOTTLE). Carefully light the rum on fire using a long matchstick or long stem lighter, and flambé (yes, think Bananas Foster) until the flame burns out (about 30s). Sprinkle on the cinnamon. Or, if you are putting on a show, shake a little cinnamon over the flames while the pan is still flaming. You can still add some more after if you want that cinnamon taste. Serve the toasts with the syrup and bananas over the top and feast! Add a scoop of vanilla ice cream if desired.View original recipe
